Roasted Potatoes & Onions

Ingredients

  • 6 small new red potatoes; washed, skins left on, quartered.
  • 1 med-lg onion (peeled & thinly sliced)
  • 1 pkg thick sliced bacon cut into small pieces

Preparation

Step 1

Partially brown bacon; remove from pan, leave drippings.

Slightly brown potatoes, cover & simmer for 10 minutes.

Place potatoes on a cookie sheet with oil.

Bake @ 375 degrees for 20 minutes.

Remove from oven & add bacon then onions on top.

Replace in oven to bake another 20 minutes.
