Tomato Preserves

Ingredients

  • 5 lbs ripe tomatoes - about 12 cups
  • 4 lbs sugar -about 8 cups
  • 2 lg lemons (seeded and sliced thinly)

Preparation

Step 1

Peel tomatoes and place in large pot.

Add sugar and let sit over night.

Drain off the juice and boil it rapidly until it spins a thread when dropped from a spoon.

Add tomatoes and lemons and boil until they are thick and lemons are clear.

Place in sterilized pint jars and seal.
