Baked Jalapeno Bacon Poppers

Ingredients
- 10 Mini sweet peppers or jalapeno peppers
- 1/4 cup bacon bits
- 1 8oz package of cream cheese (room temperature)
- 1 cup shredded cheddar cheese
- 2 teas cajun seasoning
- 2 tbs butter
- 1/2 cup crushed corn flakes

Step 1
Preheat oven to 375 degrees. Slice each pepper in half, lengthwise. Scoop out any seeds and rib to make a nice, clean boat.
Mix together bacon bits, cream cheese, cheddar cheese and cajun seasoning.
Spoon cheese mixture into each pepper.
Melt butter in microwave, stir in crushed corn flakes.
Hold each popper and dip cheese side down into crushed corn flakes.
Bake at 375 degrees for 20 minutes or until cheese is melted and topping is crusty.
