Lemon - Coconut Cake

  • 1 cup butter
  • 2 cups sugar
  • 4 eggs [seperated]
  • 3 cups flour
  • 1 tablespoon baking powder
  • 1 cup milk
  • 1 teaspoon vanilla
  • Grease and flour 3 - 9 inch cake pans
  • Cream butter until soft add sugar beating well ,add egg yolks one at a time beating well after one .
  • Combine flour ,and baking powder and add to butter mixture alternatly with milk starting with flour and ending with flour
  • add vanilla
  • Beat egg whites until stiff and fold into cake batter .
  • Pour into cake pans .
  • Bake 350 for 18 to 20 minutes ,cool in pans 10 minutes = spread Lemon filling between layers .



Step 1

Lemon filling

1 cup sugar
1/4 cup cornstarch
1 cup boiling water
4 egg yolks ,lightly beaten
3 teaspoons graded lemon rind
1/3 cup fresh lemon juice
2 tablespoons buter

Combine sugar and cornstarch in saucepan ,whisk in 1 cup boiling warwe .
Cook over med. heat whisking constantly about 2 minutes add a little to egg yolks to temper then combine , add lemon juice and rind ,
Cook until mixture thickens about 2 to 3 minutes remove from heat and add butter
Let it cool completely .

Lemon Cream Cheese Frosting

1/2 cup butter [soften]
1 pkg 8oz. cream cheese
4 cups powdered sugar
5 teaspoons lemon juice
few drops yelow food coloring1

Spread frosting on top and sides of cake , Sprinkle coconut on top and sides of cake .
