Lemon Shrimp on Rice

Ingredients

  • 1 cup long-grain white or basmati rice
  • 1 14 oz can low sodium chicken broth
  • 1/8 cup water
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • 1/8 to 1/4 teaspoon red pepper flakes (to taste)
  • 1 teaspoon lemon zest
  • 1 pound medium Arctic Shores shrimp, peeled and deveined
  • 1 lemon, sliced
  • 1 tablespoon chopped fresh cilantro

Step 1

1. Combine the rice, chicken broth, water, butter, garlic, red pepper and lemon zest in a small saucepan. Bring to a boil; reduce heat to low, cover and simmer until rice is tender, about 20 minutes.

2. Uncover the rice and add Arctic Shores shrimp and lemon slices. Cover, turn heat to medium, and steam for 4-5 minutes or just until shrimp are cooked through.

3. Top shrimp and rice mixture with cilantro and serve immediately.
