Ice Cream: Tortoni Ice Cream

Ingredients

  • 6 small (2 day old) coconut macaroons
  • 1/4 cup diced candied cherries
  • 1/2 cup salted toasted almonds or 1/2 cup salted roasted walnuts, chopped
  • 1 quart vanilla ice cream

Preparation

Step 1

Let ice cream soften a bit. Add macaroons, cherries and nuts. Stir quickly. Refreeze in cupcake holders and top with nuts.
1 T sherry or 1 t vanilla (?)
