Skillet Chocolate Pie

Ingredients

  • 3 lg egg yolks (slightly beaten)
  • 3 tblsp flour
  • 1 1/2 cups milk
  • 1 cup sugar
  • 3 tblsp cocoa powder
  • 2 tblsp butter
  • 1 teasp vanilla
  • 1 9" pie crust - baked
  • 3 lg egg whites
  • 6 tblsp sugar

Preparation

Step 1

Separate 3 eggs.

In large skillet, mix milk & egg yolks over low heat.

Sift together flour, cocoa & sugar; add to milk mixture in skillet.

Cook over low heat until thick.

Add butter & vanilla.

Pour into baked 9" pie crust.

Place egg whites & beat using electric mixer until fluffy, add 6 tblsp sugar & continue beating until stiff.

Spread meringue on top of chocolate pie.

Bake @350 degrees for approximately 5 minutes or until peaks are browned.

Remove from oven & chill.
