Ingredients

  • 4 (8-inch) flour tortillas
  • 3/4 cup shredded monterey jack or cheddar cheese
  • 1/2 cup canned black beans, rinsed and drained
  • 2 green onions, sliced
  • 1/4 cup minced fresh cilantro or 4 teaspoons ground coriander
  • 1/2 teaspoon ground cumin
  • 1/2 cup salsa
  • sour cream

Step 1

Preheat oven to 450 degrees. Spray baking sheet with cooking spray.

Place 2 tortillas on prepared baking sheet, sprinkle each with half of the cheese.

Combine beans, green onions, cilantro, and cumin in small bowl; mix lightly.

Spoon bean mixture evenly over the cheese; top with remaining tortillas. Coat tops with cooking spray.

Bake until cheese is melted and tortillas are lightly browned, about 10 to 12 minutes.

Cut each tortillas into quarters, top each with
salsa and sour cream.
