Ingredients

  • 1 TBSP olive oil
  • 1 large sweet onion, coarsely chopped (about 2 c.)
  • 1 can (10 3/4 oz.) condensed cheddar cheese soup
  • 1/2 c. milk
  • 1/2 tsp. ground chipotle chile pepper
  • 2 medium tomatoes, coarsely chopped (about 1 1/2 c.)
  • 2 lb. flank steak
  • 1/4 c. chopped fresh cilantro leaves (optional)

Step 1

Heat the oil in a 2-quart saucepan over medium heat. Add the onion and cook for 5 minutes or until tender. Stir the soup, milk, chile pepper and tomatoes into the onion. Cook and stir the soup mixture over low heat for 3 minutes or until heated through. Remove the saucepan from the heat and keep warm. Lightly oil the grill rack and heat the grill to medium. Grill the steak for 17 minutes for medium-rare or to desired doneness, turning the steak over halfway through cooking. Let the steak stand for 10 minutes before slicing. Spoon the sauce over the steak and sprinkle with the cilantro, if desired.
