Ingredients

    medium green tomatoes

  • 4

    medium onions

  • 1

    medium head cabage

  • 4

    green peppers

  • 4

    red peppers

  • 1/4

    cup salt

  • 7

    cups vinegar

  • 3 1/2

    cups sugar

  • 3

    tablespoons dry mustard

  • 2

    teaspoons powdered ginger

  • 2

    teaspoons turmeric

  • 4

    tablespoons mustard seeds

  • 4

    tablespoons celery seed

  • 3

    tablespoons pickling spice

Directions

Chop all vegetables ; combine in a large kettle .Stir in salt ; let stand overnight at room temperature . Drain , pressing out all liquid . Combine , all vinegar ,sugar and all spices [using cheesecloth for spices] Bring liquid to a boil and simmer for 30 minutes . Add vegetables and returned to simmer for 30 minutes longer .Discard spice bag . Spoon chow-chow into hot sterilized jars and seal . Turn jars upside down to keep seal hot to insure a good seal for 15 minutes then upright until cold ,check for good seal .
