Ingredients

  • 1/4 C. Extra-Virgin Olive Oil
  • 1 Tbsp. Balsamic Vinegar
  • 2 tsp. Minced, fresh oregano or 1 tsp. dried
  • 1 tsp. Minced Garlic
  • 1/2 tsp. Salt
  • 1/4 tsp. Freshly Ground Black Pepper
  • 8 Slices (1/2" thick) Ciabatta or other rustic Italian white bread
  • 4 oz. Thinly Sliced Mozzarella Cheese
  • 4 oz. Thinly Sliced Prosciutto
  • 6 oz. Jarred Roasted Red Peppers, drained

Step 1

Whisk the olive oil, vinegar, oregano, garlic, salt & pepper together in a small bowl to blend. Arrange the slices of bread on a flat work surface & using a brush, spread the vinaigrette evenly over one side of each slice. Divide the mozzarella equally over one side of each slice. Top 4 of the bread slices with the prosciutto & red peppers, then place the remaining 4 slices of bread on the top, vinaigrette side down. Heat a lg. skillet or grill pan over med heat. Add the 4 sandwiches & cook, pressing them occasionally with a lg. spatula or the bottom of a small, heavy saucepan, till the bread is golden brown & the cheese has melted, approx. 4 min. per side. Serve immediately.
