Salads: Greens with Baked Goat Cheese

Ingredients

  • 6 cups baby greens
  • 1 cup unseasoned bread
  • 1 t thyme
  • 1 cup extra virgin olive oil
  • Goat cheese

Preparation

Step 1

Preheat oven to 400 degrees
Grease pan
Refrigerate greens.
Stir in a shallow bowl, baked bread crumbs and thyme
Pour 1 cup extra virgin olive oil into a shallow bowl
Coat 2 1/2 inch diameter and 1/2 inch thick pieces of goat cheese in oil then coat in seasoned bread crumbs.
Place cheese on baking dish. Bake til golden brown and lightly bubbling, about 6 minutes.
