Ingredients
- 2 1/2 lb sweet potatoes, peeled/steamed/chunked
- 1/2 cup brown sugar, packed
- 2 tbsp butter or margarine
- 1 1/2 tbsp cornstarch
- 1/2 tsp salt
- 1/8 tsp pepper
- 1 cup prepared orange juice
Preparation
Step 1
Cut potatoes into bite size pieces
Put in deep oval corningware
Mix brown sugar and cornstarch.
Mix remaining ingredients (except potatoes) in saucepan
Heat and stir until water boils and thickens
Pour over potatoes.
Cover and bake at 350 degrees for 20 minutes
Remove cover for last few minutes
