Jalapeño Corn Casserole

Ingredients

  • 1 cup uncooked rice
  • 1 medium onion, chopped
  • 1 medium green pepper, chopped
  • 1 cup celery, chopped
  • 1/2 cup butter
  • 1-2 large jalapeños , chopped finely
  • 1 17 oz can cream style corn
  • 1 cup grated cheddar cheese
  • 1 4 oz jar diced pimentos

Preparation

Step 1

Cook rice according to package directions and set aside. Sauté onions, green peppers, and celery in butter until tender. Combine rice, vegetables and remaining ingredients, stirring well. Spoon into lightly greased 12 x 8x2 dish. Bake at 350 for 40 to 45 minutes
