Roasted Pepper and Ricotta Pasta

Ingredients

  • 8 oz. pasta
  • 1 roasted red pepper, roughly chopped
  • 1/4 cup pine nuts, toasted
  • 2 small cloves garlic, minced
  • sea salt and cracked black pepper
  • 2 tablespoons olive oil
  • 4 oz. fresh ricotta
  • 1/2 cup basil leaves

Preparation

Step 1

Cook the pasta in a saucepan of salted, boiling water for 10 - 12 minutes or until al dente. Drain and return to the pan. Place the pepper, garlic, salt, pepper and olive oil in a bowl and stir to combine. Add the pasta with the ricotta and basil and toss to combine. Garnish with pine nuts. Serve. Eat.
