RED SAUCE

Ingredients

  • 2 tablespoons flour
  • 2 tablespoons oil
  • 4 tablespoons chili powder
  • 3 dashes Tabasco sauce
  • 1 each garlic clove
  • 1 teaspoon salt
  • 1/4 teaspoon cumin
  • 1 onion chopped
  • 2 cups water

Preparation

Step 1

Heat oil in skillet and saute onion until tender. Remove from heat and add flour. Mix into a paste adding chili powder, tabasco, salt, garlic and cumin. Gradually add water and bring to a boil, stirring constantly. Reduce heat and simmer 10 minutes. Makes enough for 1 standard size recipe Beef enchiladas.
