Standard Rye bread

A basic delicious rye bread great toasted or for sandwiches

Ingredients

  • 2 cups "perfect blend" rye flour
  • 1 3/4 cups all purpose flour
  • 2 Tb potato flour
  • 1/4 cup dry bakers milk
  • 2 tsp yeast
  • 2 tsp kosher sea or bread salt
  • 1 1/2 tsp deli rye flavor
  • 1 Tb caraway seeds + extra fit the top of loaves
  • 2 Tb butter or coconut oil
  • 11/2 cups lukewarm water

Preparation

Step 1

Mix wet ingredients first then dry ending with yeast in kitchen aid stand mixer on speed 1 for 10 min. & speed 2 for 10-15 min then slap knead the dough, put in bowl, cover & let rest for 2-3 hours or put in bread machine on dough cycle in same order.
Punch down dough, shape into boules put in linen/ floured baskets or bakers let rest 1-2 hours. Score, brush w/ cornstarch wash (see basic country loaf), sprinkle w/ caraway seeds & bake in 400 degree steamed oven for 10 minutes lower to 375 degrees for 25-30 min. Remove & put on racks to cool.
