Walnut-Olive Marinated Cheese
- 4 oz. fresh mozzarella cheese
- 1/4 t coarsely ground pepper
- 3/4 cup light olive oil, divided
- 1/2 cup pimiento-stuffed olives
- 1/2 cup chopped walnuts
Carefully slice cheese into 6 slices; sprinkle cheese slices with pepper, and set aside.
Combine 1 T oil, olives and walnuts, tossing to coat. Place on an ungreased jellyroll pan or baking sheet. Bake at 400 degrees for 10 to 13 minutes or until lightly browned. Let mixture cool to touch; coarsely chop.
Layer cheese slices and olive mixture alternately in tow 4 oz jars or one 8 oz jar. Fill jars with remaining oil. Cover tightly, and keep refrigerated. Serve with baguette toasts or crackers.
Can be prepared up to 1 week ahead.
