Mel-in-Your-Mouth Filets with Mushroom Cream Sauce

Ingredients

  • 1 T olive or veg oil
  • 4 beef tenderloins (1 1/2 lb) 1" thick
  • Sauce
  • 1 1/2 c sliced fresh mushrooms
  • 1/2 c sliced leek or yellow onion
  • 1/2 c dry white wine or lower sodium chicken broth
  • 1/8 t each salt & pepper
  • 1/2 c sour cream
  • 1 T flour

Preparation

Step 1

in 12" nonstick skillet heat oil over mod high heat. add steaks. Lower heat to mod. Cook 8-10 min for med-rare or until steaks way like, turning often. Transfer to platter; cover with foil.

Sauce- add mushrooms, leeks, wine, salt & pepper to drippings in skillet. Bring to boil. Lower heat and simmer, uncovered, 3 min or til mushrooms tender.

In small bowl stir together sour cream and flour. Stir into mushroom mix. cook over mod ehat, stir constantly, 2 min or til thickened (do not boil). Serve sauce over steaks.
