Ingredients

  • 3 Egg Whites
  • 1 cup spinach
  • 3/4 cup diced tomatoes
  • 1/4 cup sliced mushrooms
  • 1 tsp. Mrs. Dash

Preparation

Step 1

Spray a skillet with non-stick cooking spray. sauté spinach and mushrooms with 1/4 cup of water on medium heat until the spinach has wilted, the mushrooms are lightly browned and all water has evaporated. Add tomatoes, then pour egg whites over veggies in the skillet and mix together. Cook for about 3 minutes or until egg whites of solidified.
