Ingredients

  • 2 cup boiling water
  • 5 tsp baking soda
  • 1 cup shortening
  • 1 1/2 cup granulated sugar
  • 4 eggs slightly beaten
  • 4 cups bran cereal
  • 2 cups bran flakes
  • 4 cups milk
  • 3 tbsp lemon juice
  • 5 cups flour
  • 1 tsp salt
  • 1 cup chopped nuts
  • 1 1/2 cup raisins or chopped dates

Preparation

Step 1

Combine boiling water and baking soda.
Cream shortening and sugar and add to boiling water mixture.
Stir in remaining ingredients until well mixed in a sticky batter.
Store, tightly covered, in refrigerator until ready to use (up to six weeks).
Do not stir batter after it has initially been made.
When ready to use, spoon into greased muffin tins and bake at 400 degrees for 12-15 minutes.
