Ingredients

  • In small bowl mix until sugar dissolves:

  • 3

    T packed dark brown sugar

  • 2

    T orange juice

  • 1 1/2

    tsp paprika

  • 1/4

    tsp ground cumin

  • 1/4

    tsp crushed red pepper

  • Salmon – center cut, skin on (6 0z each)

Directions

- Grill salmon, skin side up 4 minutes, then carefully -Brush sugar mixture over salmon cook 4 to 5 minutes longer until fish just turns opaque throughout – continually brushing sugar mixture over salmon. - Carefully remove salmon from grill by sliding long, thin spatula between flesh and skin – discard skin
