Roasted Pork Tenderloin

Ingredients

  • 1 pork tenderloin
  • 1 cup orange juice
  • 1/4 cup honey
  • 1 lg jar orange marmalade
  • 5 sprigs rosemary
  • 3 whole cloves garlic (peeled and smashed)
  • 4 slices maple-flavored bacon
  • 6 6 inch cuts of string

Preparation

Step 1

Combine orange juice, honey, 1 sprig of rosemary with leaves pulled off of stem, orange marmalade and oil in a Ziploc bag. Squish & mix around until well blended.

Add tenderloin to bag and let marinade in refrigerator for 2-24 hours

Prepare a 9"X13" baking dish by spraying with Pam

Place 3 sprigs of rosemary on the bottom of the pan lengthwise with 3 crushed cloves of garlic

Place 3 strings across for each tenderloin, lay tenderloin across string, place 2 slices of bacon on top of tenderloin and bring strings up to tie & secure.

Place tenderloin on top of garlic & rosemary sprigs

Bake @375 degrees approximately 20-25 minutes

Remove from oven & spoon glaze over tenderloin. Cover with foil and let sit for 5 minutes.

Cut off strings, slice and serve with glaze.
