Mexican Casserole

Ingredients

  • 2 lbs ground beef
  • 1 med-lg onion (finely chopped)
  • 1/2 box Velvetta Cheese
  • 1 can evaporated milk
  • 1 can cream of mushroom Soup
  • 1 can cream of chicken Soup
  • 1 can chopped green chili's
  • 1 sml can pimentos (optional)
  • 1 pkg corn tortillas
  • 2 cups grated longhorn cheese

Preparation

Step 1

Preheat oven 350 degrees

Brown ground beef & onions.

In large sauce pan melt together Velveeta Cheese, milk, soups, chilies & pimentos.

Spray 9" X 13" pan & layer tortillas, meat mixture & cheese sauce; repeat.

Sprinkle top with longhorn cheese.

Cover with foil & bake for 30 minutes.

Remove foil & bake another 10 minutes.
