Ingredients
- 2 cups heavy cream
- 4 lg egg yolks
- 2 1/2 tblsp sugar
- 1/8 teasp salt
- 1 teasp vanilla
- brown sugar for topping
Preparation
Step 1
Start a kettle of water to boil.
Scald cream in a sauce pan.
In a bowl, whisk yolks until thick & creamy.
Add sugar & salt to egg yolks and whisk again.
Add hot cream a little at a time & whisk constantly.
Add vanilla.
Pour in sprayed ramkins (1/2 full).
Place baking sheet with at least a 1/2 each lip on oven rack.
Place ramkins on a baking sheet.
Pour hot water onto baking sheet around ramkins.
Bake 1 hour.
Carefully pull rack out from oven & with oven mitts remove ramkins one at a time.
Remove baking sheet with water & pour water out.
Sift brown sugar to a depth of 1/3 inch on top of each cup.
Place ramkin's back on empty baking sheet under broiler 4-5 inches from heat and broil until sugar melts & forms a hard, crunch crust top.
