Potato Skins

Ingredients

  • 4 Potatoes
  • 1 pkg Bacon (cooked & crumbled)
  • 1 cup Shredded Cheddar Cheese
  • 1 bunch Green Onions (chopped)
  • 1 carton Sour Cream
  • Salt

Preparation

Step 1

Wash & wrap potatoes in foil.

Bake potatoes for 1 hour or until tender when squeezed with a pot holder.

Unwrap potatoes & let cool down 15 minutes

Cut potatoes in half & remove most, but not all, of the potato.

Cut potatoes in half again & place on a sprayed cookie sheet.

Fill each potato with cheese & bacon bits.

Put back in oven until cheese is melted 5-10 minutes.

Remove to platter & top with green onions

Salt & serve with sour cream or Ranch Dressing.
