Zucchini Bread

Ingredients

  • 3 cups flour
  • 1/2 t. baking powder
  • 1 t. baking soda
  • 1 t. salt
  • 3 t. cinnamon
  • 1 cup oil
  • 2 cups sugar
  • 3 eggs
  • 2 cups grated raw zucchini
  • 1 t. vanilla
  • 1/2 cup chopped nuts

Preparation

Step 1

Blend oil and sugar. Beat in eggs, one at a time. Add zucchini and vanilla. Sift dry ingredients together and beat thoroughly. Add nuts. Pour into pan, reased and floured, 8 1/2 inches x 4 1/2 inches. Makes 2 loaves.

Bake at 325 degrees 1 hour.
