Ingredients

  • 1 1/3 c. oil
  • 5 eggs
  • 1 (15 oz.) can pumpkin
  • 2 c. flour
  • 2 c. sugar
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1 tsp. baking soda
  • 2 (3 oz. each) pkg. vanilla pudding
  • 1 c. nuts
  • 1 1/2 c. craisins, optional

Step 1


Preheat oven to 350º. Mix oil, eggs, and pumpkin. Add dry ingredients except pudding, nuts and berries. After blending wet and dry ingredients, fold in pudding nuts and berries. Pour into 2 regular sized loaf pans and bake for one hour. Check with toothpick for doneness. Makes 36 muffins.
