Pflinzen (Russian Pancakes)

Pflinzen are something we enjoy eating, but are labor intensive. You must roll them with a fork! We like to put bacon on them and/or peanut butter.

Ingredients

  • 2 eggs
  • 2 cups flour
  • 2 cups milk
  • 1/2 tsp salt
  • 1/3 cup oil

Step 1

Whirl eggs, flour, milk and salt, in blender or use rotary beater---important to use one of these appliances to add the air into the batter.

For each pflinzen:

*Heat 10" skillet until medium hot. Add approximately 1 tsp oil to skillet and tilt skillet to cover entire surface with oil.
*Add about 1/4 cup pancake batter to skillet tilting skillet to allow to run over entire surface of skillet. (or use amount of batter it takes to cover skillet with thin layer)
*Turn after a minute or two when underside is browned. Cook until 2nd side is also browned. Remove to serving plate & keep warm.

Repeat above steps for all of the batter, including adding the oil each time.

Finished pancakes will be thin with crisp edges.

To serve pancakes: place butter, peanut butter, or other filling of choice on pancake. We some times put bacon on ours.

Use fork to roll pancake, cut into bite sized pieces and serve with syrup.
