Cranberry Christmas Pudding
- 1 1/2 cups brown sugar, packed
- 1 cup whipping cream
- 1/2 cup butter
- 1/4 cup cornstarch in 1/2 cup milk
- 1 1/2 cups flour
- 2 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup molasses
- 1/2 cup boiling water
- 2 cups cranberries
Mix together and cook in double boiler until thick (about 2 hours)
Combine dry ingredients in a bowl
In a measuring cup measure the molasses, then add boiling water to make 1 cup. Mix well.
Add molasses mixture to flour and stir until blended. Mix in cranberries.
Cover well with foil, steam for 2 hours.
