Honey-Pecan Chicken

Ingredients
- 1/2 cup pecans
- 2 Tbs cornflake crumbs
- 2 Tbs honey
- 1 Tbs soy sauce
- 4 5-oz boneless, skinless chicken breast

Step 1
Preheat oven to 425.
Finely chop the pecans in a food processor. Mix together the pecans and cornflake crumbs on a sheet of wax paper. Combine the honey and soy sauce in a shallow bowl. Dip both sides of each chicken breast into the honey mixture, then into the pecan mixture to coat. Arrange on a rack in a foil lined baking sheet sprayed with nonstick spray. Bake until the chicken is cooked through, about 5 minutes on each side.
Serve this dish with a tomato-cucumber salad and creamy mashed potatoes for a family feast.
