Ingredients
- 2 cups flour
- 4 tsp baking powder
- 1 tsp cinnamon
- 1/8 tsp nutmeg
- 1/8 tsp allspice
- 3/4 cup sugar
- 1 1/2 cup canned pumpkin
- 3 eggs
- 1 cup milk
- 3/4 cups vegetable oil (applesauce)
- 1/2 tsp vanilla
Preparation
Step 1
1. Pre-heat a griddle or skillet. In a small bowl, combine the flour, baking powder, cinnamon, nutmeg, allspice and sugar. In a large bowl, beat together the pumpkin and eggs. Stir in the milk, oil and vanilla. Fold the dry ingredients into the pumpkin mixture.
2. Pour 1/4 cup batter scoops onto lightly greased griddle or skillet. Cook until bubbles form. Flip and cook other side until bottom is golden brown.
