Egyptian Ful (Breakfast)

Ingredients

  • 1 16 oz can fava beans (Ful Mesdames)
  • 2 Large minced Garlic
  • 1 small onion (finely diced)
  • 1 tsp of salt
  • 1/2 cup lemon juice
  • 1/2 cup chopped tomato
  • 1/2 cup chopped parsley
  • 1 tsp hot pepper flakes
  • 1 tbs powdered cumin
  • 1 tbs powdered coriander
  • 1/4 cup extra virgin olive oil

Preparation

Step 1

In a pot, warm up the fava beans for 25 minutes on low - or longer the better.
In a smaller saucer, heat some of the oil and cook the onion, garlic, coriander/cumin chilli flakes until browned. Add tomatoes.
Once cooked combine with beans and parsley. Add lemon and salt to taste. With a mortar, mash half of the beans then mix with a spoon.

Top with olive oil Serve with pita bread.
