Tomato and Pine Nuts Pasta

Ingredients

  • 1 lb angel hair pasta
  • 2 1/4 tbsp olive oil
  • 3/4 chopped sweet onion (~2 cups)
  • 6 cloves garlic, minced (~2 tbsp)
  • 1/3 cup wine, white dry
  • 3/4 cup chicken broth, canned, low sodium
  • 24 yellow cherry tomatoes, halved (~3 cups)
  • 24 red cherry tomatoes, halved (~3 cups)
  • 1/3 cup basil, fresh, chopped
  • 1 1/2 tbsp pine nuts, toasted

Preparation

Step 1

Bring a pot of salted water to the boil and cook the angel hair until "al dente", about 3 minutes.
Drain.
Meanwhile, heat the oil in a pan over medium high heat.
Add the onion and garlic and saute for 2 minutes.
Add the white wine and chicken broth and bring to a boil.
Add the tomatoes and allow the liquid to reduce by half.
Stir in the basil and the pine nuts.
Toss with the cooked pasta and serve.
