M ini Cheesecakes

Ingredients

  • 1 Pk (8oz) cream cheese, softened
  • 1/3 Cup Sugar
  • 1 Egg
  • 1 Tsp. vanilla extract
  • 1/4 Tsp. almond extract
  • 12 Vanilla wafer cookies (or chocolate wafers)
  • fresh or canned fruit

Preparation

Step 1

Beat cream cheese until light and fluffy. Gradually beat in sugar, scraping sides of bowl. Add egg and beat well. Mix in extracts.

*Arrange small paper liners in mini muffin tins. Place a wafer in bottom of each muffin cup.
Evenly divide cheese mixture among cups.


Bake in 350 oven for 15 minutes, remove add 1/2 tsp fruit to top and continue baking another 10-15 minutes or until edges are lightly browned. Refrigerate over night.

*I used delmara mini muffin pan with no liners.

I doubled recipe and made 28 muffins.
