Preheat your oven to 400 degrees.

Chop all your vegetables to approximately the same size. Toss with 1-3 tablespoons of olive oil, depending on how many vegetables you're using (you just want a thin coat). Season generously with salt, pepper and another spice, if desired.

Spread in a single layer on a parchment or foil lined baking sheet. Roast for 30-50 minutes, stirring every 15 minutes, until your vegetables are fork-tender. They're ready to use!
