Ingredients
- 1 1/2 pounds chicken breasts {I used 6 med size pieces}
- 1/4 cup olive oil {divided}
- 1 red onion {sliced}
- 2 red or orange bell peppers {sliced}
- 1 jar of marinated artichoke hearts
- 1 cup of pitted Kalamata olives
- 1 cup of cherry tomatoes
- 1/2 cup of fresh mozzarella pearls {or cut into bite size pieces}
- salt and pepper to taste
Preparation
Step 1
Heat 2 tbsp olive oil {over med-high} in a large skillet
Season the chicken with salt and pepper
Brown the chicken { in small batches} on both sides, and then set aside
Heat the oven to 425
Combine the onion and the bell peppers with the remaining olive oil
Place in the baking dish and cook until they begin to soften {about 10 minutes]
Top the onion and peppers with the chicken, the artichokes {and the marinade}, the olives, and tomatoes
Bake until the chicken is cooked through {about 15 - 20 minutes}
Remove from the oven and add the cheese
