Ingredients
- 1 1/2 c white cornmeal mix
- 1/2 c all purpose flour
- 1 tsp sugar
- 2 large eggs, lightly beaten
- 1 1/2 c buttermilk
- 1 c cheddar cheese, shredded
- 1 (7oz) jar pimento, diced, drained
Preparation
Step 1
Heat oven to 450* place cast iron corn stick pans or skillet in oven, heat for 5 minutes. Remove from oven and coat with vegetable spray. Spoon batter into pans. Bake for 8 minutes or until golden brown. Remove from pans immediately.
