Pumpkin Muffins with Cream Cheese Frosting

Ingredients
- Pumpkin Muffins:
- 1 egg
- 1/3 cup vegetable oil or 5 tbsp butter, melted
- 1/4 cup milk
- 2/3 cup pureed pumpkin, fresh or canned
- 1 cup sugar
- 1 cup flour
- 3/4 tsp baking soda
- 1/2 tsp salt
- 1/4 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp ginger
- Cream Cheese Frosting:
- 8 oz cream cheese, room temperature
- 1 cup confectioners' sugar
Preparation
Step 1
Muffins:
Combine egg, oil, milk and pumpkin. Beat well.
Sift together sugar, flour, baking soda, salt, cinnamon, nutmeg and ginger. Stir into liquid and mix well.
Do not beat. Fill molds 2/3 - 3/4 full and bake for 25 to 30 minutes. Immediately remove from pan and serve warm with Cream Cheese Frosting.
Frosting:
With an electric mixer whip the cream cheese until smooth and gradually add the confectioners' sugar to taste. Some folks like this more cheesy and less sweet. You can also add some orange zest to it to make it a bit more festive. Enjoy!
