Italian Kale

An easy preparation of kale. The simple additions of balsamic vinegar, garlic and nuts show off kale's natural sweetness and rich texture.

Ingredients

  • 1 bunch kale, stems removed and leaves coarsely chopped
  • 1 clove garlic, minced
  • 1 Tbs olive oil
  • 2 Tbs balsamic vinegar
  • Salt and pepper
  • 1 onion, finely chopped
  • 1/2 cup chicken broth or water
  • 1/2 cup nuts-almonds, pine nuts or cashews
  • parmesan cheese

Preparation

Step 1

Saute garlic and onion in EVOO over medium-medium high heat. Add kale with 1/2 cup water or chicken broth. Cook it down until liquid has evaporated and kale has wilted, Add salt and pepper if needed. Add balsamic vinegar and mix well. Can also add 1/2 cup almonds, pine nuts or cashews for crunch.
Add parmesan cheese right before serving.
