Three Bean Two Nut Salad

Ingredients

  • 1 (15 oz) can red beans, drained & rinsed
  • 1 (15 oz) can white beans (garbanzo or cannelini), drained and rinsed
  • 1/2 lb fresh cooked green beans, cut into 1 inch pieces
  • 2 green onions, sliced
  • 1 small or half of a large red bell pepper, chopped
  • 1/2 cup shredded carrots
  • 2 tablespoons (about 8 pieces) sundried tomatoes, hydrated and chopped
  • 1/3 cup sliced almonds, toasted
  • 1/3 cup chopped walnuts, toasted
  • Juice of 1 lemon (1 - 2 tablespoons)
  • 3 tbsp Italian style salad dressing
  • 2 tbsp chopped fresh parsley
  • Salt, to taste
  • Pepper, to taste

Preparation

Step 1

Mix all ingredients together in a large bowl and serve.
