Chocolate Gingerbread Cookies

Ingredients

  • 2-1/4 cups Flour
  • 1 teaspoon Baking Soda
  • 2 heaping teaspoons Ginger
  • 1 heaping teaspoon Cinnamon
  • 1 teaspoon Cloves
  • 1/4 teaspoon Salt
  • 3/4 cup Butter
  • 1/2 cup Brown Sugar
  • 1/2 cup Sugar
  • 1 Egg
  • 1 tablespoon Water
  • 1/4 cup Molasses
  • 1-2 cup Semi Sweet Chocolate Chunks
  • Raw Sugar for coating

Preparation

Step 1

In a separate bowl, mix together the flour, ginger, baking soda, cinnamon, cloves, and salt. Set aside.

In a large mixing bowl, cream together the butter and sugars until light and fluffy. Beat in the egg, then stir in the water and molasses. Gradually stir the sifted ingredients into the molasses mixture. Add the chocolate chunks and mix until they are well distributed.

Scoop out the dough and drop into a bowl with raw sugar, rolling around until it is coated in sugar. Place the cookies 2 inches apart onto an ungreased cookie sheet, and flatten slightly.

Bake for 8 to 10 minutes in a 350 degree oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. Store in an airtight container.
