Ingredients
- Butterscotch Pudding
- 1/2 cup packed dark brown sugar
- 2 Tbsp plus 2 tsp. cornstarch
- 1 1/2 cups whole milk
- 1/2 cup heavy cream
- 2 Tbsp unsalted butter, cut into bits
- 1/4 tsp salt
- 1 tsp vanilla extract
Preparation
Step 1
Whisk together the sugar, salt and cornstarch in a medium saucepan.
Whisk in the milk and cream.
Bring the mixture to a boil, whisking frequently then boil for 1 minute, whisking continuously.
Remove from heat and whisk in the vanilla and butter.
Pour into a bowl and cover with buttered parchment or wax paper and cool completely.
Serve with a dollop of sweetened whipped cream. Makes 4 servings.
