Upside Down Apple Pecan Pie

Ingredients

  • 1 cup pecans, unbroken halves
  • 1/2 cup brown sugar
  • 1/4 cup margarine
  • 2 prepared pie crusts, refrigerated
  • 6 medium baking apples, peeled and sliced not to thin
  • 1/4 cup granulated sugar
  • 2 T flour
  • 1/2 t cinnamon
  • 1/8 t nutmeg

Step 1

In 9-inch pie pan, melt margarine in oven or microwave and combine with brown sugar. Spread mixture evenly over bottom of pie pan and arrange pecan halves upside down in concentric circles starting at the outer edges of the pie pan with larger pecans working to the middle with smaller pecans.

Unroll prepared pie crust and place it in the bottom of the pie pan on top of the margarine/sugar mixture and pecans. Carefully stretch the unbaked crust into the corners of the pie pan.

In a large bowl, combine peeled and sliced apples, granualted sugar, flour, cinnamon and nutmeg, mix lightly to coat apples. Arrange apple slices in unbaked pie crust. Top with second pie crust. Flute unbaked pie crusts together sealing the edges. Cut several slits in the center of the pie crust to allow heat to escape during baking. Pie can baked or frozen until ready to use.

Place thawed unbaked pie on bakihg sheet in preheated oven. Bake at 375oF for 40-50 minutes. Cool pie for 10 minutes. Place serving plate upside down on pie. While standing over the sink, quickly invert pie onto plate and replace any pecans that remain in the pie pan. Cool at least 1 hour before serving.
