Pork and Green Chili Stew

Ingredients

  • 1 1/2 lb. pork butt, trimmed of fat, cut into small strips
  • 1 med. onion roughly chopped
  • 1 T. minced garlic
  • 1 14 oz. can diced tomatoes with juice
  • 2 c. roughly chopped roasted green chilies (see recipe)
  • Garlic powder (optional)
  • Warm tortillas or rice

Preparation

Step 1

1. Put large, deep skillet or dutch oven on high heat

2. When hot add pork. Stir till juice evap. About 8 min. (not looking to brown the meat)

3. Add onion and a sprinkle of salt. Cook till softened. (about 4 or 5 min)

4. Add garlic, tomatoes, 1 cup water.

5. Bring to boil and boil vigorously 2 to 3 min.

6. Add chilies, sprinkle of salt, and garlic powder (opt)

7. Reduce heat, partially cover, cook till most of juices evap., about 6 to 10 minutes.

8. Taste to adj. seasoning. Serve.
