Ingredients
- vegetable oil
- 2 T sesame oil
- 1 lb boneless, skinless chicken breasts, sliced ito strips
- 9 oz broccoli, divided into small flowerets
- 9 oz baby corn on the cob, halved if large
- 1 small red bell pepper, cored, sedded, and sliced
- 2 T soy sauce
- 1 C ornage juice
- 2 tsp cornstarch
- 2 T cornstarch
- 2 T toasted sesame seeds
- 1/3 C roasted, shelled, unsalted peanuts
- rice or noodles, to serve
Preparation
Step 1
Heat oils in a large heavy-bottomed skillet until smoking. Add chicken and stir-fry untiil browned, about 4-5 minutes.
Add broccoli, corn and red pepper and stir-fry for 1-2 minutes.
Meanwhile, mix the soy sauce with the orange juice and conrstarch. Stir into the chicken mixture, stirring constantly until sauce has slightly thickeed and glaze develops.
Stir in the sesame seeds and peanuts, mixing well. Heat the stir-fry for 3-4 minutes.
Transfer to a warm serving dish and serve with rice or noodles.
