Ingredients

  • fresh or smoked salmon fillets
  • fresh halibut or other white fish fillets
  • cooked sticky rice or long grain white rice
  • hollandaise sauce
  • cream of spinach mixture (frozen section)
  • lemon pepper
  • salt
  • puff pastry - 2 sheets.

Preparation

Step 1

Pre-heat the oven to 400 degrees.

Lay out one sheet of puff pastry. Cover with salmon fillets, leaving a one inch border all around. Season salmon with lemon pepper and salt. Spread creamed spinach on top of salmon. Top with a layer of cooked rice. Place halibut fillets on top of salmon and season with lemon pepper and salt. Cover the halibut with creamed spinach and rice. Drizzle about 1/4 cup of hollandaise sauce over all.

Brush beaten egg on the border all around the pie. Lay the second layer of puff pastry over all and crimp the border all around. Wash the pie with the beaten egg and cut a few vent holes on the top of the pie. Place the pie on a baking sheet.

Chill the pie for at least one hour before baking.

Bake until pie crust is golden brown. Let sit for about 15 minutes. Serve with hot hollandaise sauce.
