Ingredients
- 8 to 10 large green chilies such as Poblano or Anaheim
Preparation
Step 1
1. Heat oven to 450 or turn broiler to high and rack about 4" from element.
2. Put chilies on a foil lined baking sheet.
3. Roast or broil, turning as they brown, until they collapse and darken. Up to an hour in the oven, 20 min. under the broiler.
4. Wrap the chilies in foil, or put them in a bowl with saran wrap.
5. When cool enough to handle, remove skin, seeds, and stems under running water.
6. Use immediately or refrigerate up to a few days.
