Ingredients
- Russian Dressing:
- 1 cup mayonnaise
- 1/4 cup chili sauce
- 1 tablespoon minced onion
- 1 tablespoon minced dill pickle
- 1 tablespoon minced celery
- 1 tablespoon minced parsley leaves
- 1 tablespoon heavycream
- 1/2 teaspoon drymustard
- 1/2 teaspoon hot pepper sauce
- 1/4 teaspoon worcestershire sauce
- 1/4 teaspoon sugar
- salt
- 2 pounds corned beef, sliced thin
- 12 slices Rye bread
- 12 ounces sauerkraut
- 12 slices Swiss Cheese
- cole slaw, homemade
- Softened butter
Preparation
Step 1
For Dressing:
In bowl, combine allingredients except salt and whisk until well blended. Add salt to taste and refrigerate until ready to serve.
Preheatoven to 350. Place corned beef in a shallow baking dish ans sprinkle with a little water. Cover tightly with aluminum foil and bake until heated through, about 20 minutes.
Lay the bread slices on a clean work surface and spread 1 side with the Russian Dressing. Layer the corned beef, followed by the sauerkraut, the slices of Swiss Cheese and then the cole slaw. Place the remaining bread slices on top, dressing sides down,and set aside.
Heat skillet over medium high heat. When hot, brush 1 sideof the sandwich with your softened butter. Place in pans buttered sides down, and cookuntil crispy and golden brown about 4 minutes. pread the unbuttered top sides of the sandwiches with the remaining butter and turn to cook on the other side. Until crisp and golden brown. Make sure the cheese is melted. Transfer the sandwiches to a cutting board and cut in half. Serve immediately.
