Easy Brunswick Stew

Ingredients

  • 1 onion, finely chopped
  • 2 Tbsp EVOO
  • 2 c Pulled Pork
  • 10 oz frozen corn, thawed
  • 10 oz frozen baby lima beans, thawed
  • 10 oz frozen sliced okra, thawed
  • 10 oz frozen peas and carrots combo, thawed
  • 2 c Tomato Sauce
  • 1 c beef broth
  • salt and pepper
  • 2 slices crusty bread

Preparation

Step 1

In a late dutch oven, cook onion in EVOO over medium heat until tender, 5 minutes

Add pork and cook 1 minute.

Add thawed vegetables, tomato sauce and broth.

Cover and simmer until vegetables are tender, 5 minutes.

Season with salt and pepper; serve with bread.
